Thank you for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
I began my career in the food and beverage industry in 2003, shortly after graduating from university, when I opened a small fried chicken shop. At that time, I was young and fearless, and I underestimated the challenges of running a restaurant. My first venture in Falls Church did not go as planned, and I lost everything I had invested. While it was a difficult period, it became an invaluable learning experience that shaped the way I approach business to this day. Since then, I have spent over 22 years building businesses in the food service industry, with a particular focus on creating memorable dining experiences for guests.
In 2022, while traveling frequently to Korea, I was introduced to the “omakase” culture, which had become very popular at the time. Among the many variations, it was the coffee omakase that caught my attention. Ironically, I had never been a coffee drinker until just a few years prior. However, I have always believed that if I am going to sell something—especially food—I must first study it deeply and understand it better than anyone else. Before opening my first café, I immersed myself in learning about coffee. Thanks to my background in restaurants, transitioning into specialty coffee felt natural and became an exciting new chapter in my career.
Today, I lead two brands: Gute Leute and Noori Chicken. Gute Leute is a project I run together with Sean Moon, my former college roommate and close friend of nearly 30 years. Sean is someone I have never had a conflict with, a partner who has always been honest, trustworthy, and committed to giving his best for others. Beyond his character, he also brings strong capabilities and professionalism that make him an invaluable partner. For me, the number of locations is less important than the quality of each guest’s experience. I strive to deliver food and service that reflect the highest standards, and I pay close attention to guest feedback and reputation. Both concepts were created with the intention of offering not just a product, but a meaningful and memorable experience that guests will want to share and return to.
Ultimately, my philosophy in business—and in life—centers on balance. I value quality over quantity and believe success should not come at the cost of health, family, or integrity. As a husband and father to one son, I aim to be fully present at home while also building businesses I can be proud of. Looking ahead, my vision is for Gute Leute and Noori Chicken to be recognized as trusted and respected brands, and for myself to be known as both a dedicated leader and a responsible father.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has not always been a smooth road. In fact, my early years in business were both promising and humbling. During the first five years, things went very well—I was still in my early thirties, full of energy and confidence, and I expanded aggressively without much hesitation. However, one of my new locations turned into a significant failure, and to make matters worse, I became involved in a legal dispute that lasted for seven years.
That period was extremely difficult, both financially and personally. My son was only five years old at the time, and balancing the weight of a long legal battle with the responsibilities of being a father tested me in every way. Looking back, those struggles taught me humility, patience, and the importance of building a more sustainable and thoughtful approach to business. They shaped the way I manage risk today and reminded me of the value of resilience and perspective.

Gute Leute is an experimental and refined coffee brand that bridges Korean and American coffee culture, while always keeping the guest at the center of everything we do. The name itself means “good people” in German, and this philosophy is reflected not only in what we serve but also in how our team approaches hospitality. We believe that when good people take care of guests sincerely, the entire experience becomes more meaningful.
Our signature offering is the coffee omakase, a multi-course, curated tasting journey that allows guests to experience coffee in a way they may never have before. Each season brings new inspiration, and we recently launched our Fall Omakase in October. These projects are not only about drinks but also about storytelling, presentation, and creating a unique cultural moment that connects people.
What sets Gute Leute apart is the combination of our values and our craft. We are not simply another café serving coffee—we are a team of people dedicated to delivering genuine care and quality. For us, guest experience comes first, and we constantly refine every detail to ensure it reflects the highest standard.
I feel most proud when I hear feedback from our guests, especially after completing an omakase season. Knowing that people leave with a sense of joy and discovery is what makes the hard work worthwhile. Ultimately, I want Gute Leute to be remembered as a brand synonymous with quality, creativity, and sincerity—a place where both the drinks and the people embody what it means to be “good.” Looking ahead, we plan to expand into New York and other major U.S. cities, bringing this unique vision of coffee culture to a wider audience.
What was your favorite childhood memory?
One of my favorite childhood memories is traveling a lot with my family. I had the chance to visit many different places, and those experiences taught me to appreciate new cultures, food, and people from an early age.
