Community Highlights: Meet Kaitlin Castor of Theo’s Rolls and Bowls

Today we’d like to introduce you to Kaitlin Castor.

Hi Kaitlin , so excited to have you with us today. What can you tell us about your story?
Being born and raised in the Philippines, great food has always been a huge part of our lives. We would travel miles just to explore and enjoy different cuisines. Along the way, we fell in love with the Bánh Mì sandwich — its freshness, flavor, and how it was such an easy, satisfying go-to meal.
While traveling for a great Bánh Mì was never an issue for us, we felt that the Baltimore community would enjoy it too. That inspired us to create a food stall that offers a modern take on this traditional favorite, and that’s how Theo’s Rolls and Bowls was born.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Just coming out of the pandemic as a young couple starting out in life, we didn’t have much. But we had determination and strong faith in our dream. Financially, Maryland Capital Enterprises played a huge role in helping us get started.

Since this was our first business venture, we had to learn and research every step along the way. From licensing and purchasing equipment to standardizing recipes and building systems we believed could eventually grow and scale.

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
I’m the owner of Theo’s Rolls and Bowls

Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
Our families have been incredibly supportive, and we truly could not have done this without them.

We’re also deeply grateful to Arsh Mirmiran, Larry Koch, and Philana Murphy, who have been amazing mentors throughout our journey. They were tireless in sharing insights, making introductions, and opening doors for us along the way.
