Daily Inspiration: Meet Danae Schrock

Today we’d like to introduce you to Danae Schrock.

Hi Danae, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Charmed. has been a dream of mine for years now. My whole life has been restaurant and food-related… starting with working in my mom’s restaurant/cafe when I was 11/12, to getting my first restaurant job right out of high school and becoming their line cook, to culinary school. After culinary school and working in several kitchens, I knew my dream was to one day own my own place and wanted to know more about the front of the house and management of restaurants. That led to me becoming a server and bartender and then eventually moving up to management at a restaurant in Baltimore. After managing for a couple of years and going back to school to get my Bachelors Degree in Business, I decided it was time to bring Charmed. to life. My sister (Donna Borntrager – also part owner) was there to support me and help me with Charmed and in 2016 – we started on concept, menus, and ideas for our restaurant. We both wanted Charmed. to be a quaint, charismatic and friendly neighborhood restaurant that is known for its exceptional service, full-flavored food, and welcoming vibe. The love of food is not a new concept in our household. Having grown up in a Mennonite home, we were taught to love all things food. Our mom taught us the valuable life lessons of how to make amazing food from scratch, how to host fantastic parties, that nearly anyone can be made happy by being fed, and that anything can be made better by adding a little bit more butter.

Our goal was for Charmed. is to be a place where the atmosphere is full of delicious aromas, friendly chatter, and hearty appetites. We never want you to leave without feeling happy, content, and already planning your next visit. We love food. We love creating food, eating food, and making people happy with food. We wanted to bring that to Charmed. and create a sense of home, comfort, and charm! Our idea was to create, produce, and serve delicious, full-flavored food and establish Charmed. as a favorite local restaurant.

The process of starting Charmed. took quite a long time… everything from finding a building, dealing with all of the permits, contractors, and simply building a restaurant from the ground up. We signed a lease for a building in December of 2017 and by January 2019, we were ready to open. It was a crazy year which included multiple different chefs, 80 hour work weeks, little sleep, and very very long days but… we made it through.

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
We thought we had put everything we needed in our business plan. However, we did not plan for a pandemic. We were only just in our 2nd year of business when COVID hit. Luckily, we were able to stay alive and afloat by being able to run Charmed., just the 2 of us, without getting paid. Times were tough and we are slowly getting beyond just surviving and moving on to thriving and able to hire back our wonderful employees.

Can you tell our readers more about what you do and what you think sets you apart from others?
As far as what we specialize in… I’d say that our baked goods are probably the biggest sellers and the thing that separates us from others. At Charmed., we make all of our baked goods from scratch and a lot of our recipes are from our mom. Our biggest seller, I would say, is our chocolate chip cookies. We also make a variety of scones and muffins every day. This year we have started making fresh bagels, croissants, chocolate croissants, and poptarts. I’d say one of our biggest struggles right now is just the oven space and space in general to keep up with the demand of baking… and the time!
