Today we’d like to introduce you to Edward Lee.
Hi Edward, please kick things off for us with an introduction to yourself and your story.
I’ve been working in restaurants since I was 14, and I’ve always been drawn to the craft. My journey began in French and Italian kitchens, but I was always driven to tell my own story through Korean ingredients. Along the way, I found inspiration in the flavors and traditions of Southern food. Now, at SHIA, I’m excited to express a modern Korean cuisine that reflects my unique culinary path.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
There are always challenges in the restaurant business, but I see them as learning moments that have shaped who I am and how I handle adversity. This is not a career path for the timid, and I have found my work ethic, my voice, and my strength through many long nights in the kitchen and countless obstacles in the business. It may be a cliché, but it’s true that what doesn’t kill you only makes you stronger.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I’m a chef, cookbook author, and the founder of the LEE Initiative and SHIA, nonprofits dedicated to creating change through food. As a storyteller, I wear many hats, but they all share a common thread: using food as a powerful tool for connection and activism. My restaurants in Louisville, KY, and Washington, D.C., serve as a canvas for this work. In addition, I travel to Seoul to research the rich history of Korean food.
Can you share something surprising about yourself?
It’s not really a secret but I do like a night of good karaoke.
